Rice
Its nutritional value is very important. Rice contains about 90% of plain and complex carbohydrates and is free of gluten, the basic protein of cereals. Rice, and in particular the long grain, is rich in B complex vitamins, such as niacin, thiamine, riboflavin and selenium.
Rice does not cause allergies. It is easily digestible and can be consumed by everyone. It does not contain cholesterol, salt and fat. It belongs to the group of cereals that are the basis of our diet. In the pyramid of the diet, rice is included with bread, pasta and breakfast cereals at the base of the pyramid, and we should consume 6-11 servings daily (1 serving corresponds to 1 slice of bread and 1/2 cup cooked rice, pasta and cereals).
Pulses
The pulses family includes beans, lentils, chick peas, split, and others. They are characterized by a high nutritional value (about 350 calories per 100 grams) and are a rich source of slow-absorbing compound carbohydrates, amino acids, fiber, vitamins (B, C and E), trace elements and, of course, proteins. Pulses have zero fats and sugars and are an integral part of the wider Mediterranean diet and Greek traditional cuisine.
Pulses contain rich amounts of fiber (mainly soluble and non-digestible) even more so than cereals. Dietary fiber helps to eliminate fat from the intestines by providing protection against bowel cancer while a dietary fiber diet is associated with a reduced risk of developing heart disease as it helps to lower cholesterol.
